
Pralines
Two theories explain the origin of pralines. One claims they were born in early 20th-century Belgium, when a creative pharmacist coated medicine in chocolate to improve its taste.
The other suggests their origins lie in 16th-century France, where almonds or walnuts were coated in caramelised sugar.
Whatever their origin, Chocolate Pralines are now a hallmark of fine Piedmontese chocolatiers. La Perla di Torino produces more than ten varieties of Pralines, each with a soft filling covered in a thin layer of Chocolate and carefully decorated by hand.
